The tender Riesling grapes for this Icewine were picked in Niagara-on-the-Lake when the temperature first dipped to -10°C. After each grape was pressed while still frozen to release its individual drop of pure extract, the juices were fermented at a cool temperature to retain fruit concentration before aging in stainless steel tanks.
