The harvest of the Garganega grape used to produce Soave begins around mid-September and lasts until the end of October. Two passes through the vineyards along with careful grape selection ensure perfect ripening. The grapes are then left to dry for two months to intensify the flavor. The wine matures for one year in lightly toasted barrels. The oak is perfectly balanced – not overwhelming the wine, simply adding texture and complexity.
